Is it possible to maximize a window to fill monitors 1 and 2 but exclude monitor 3 without disabling it? I use MultiMon to allow local KVM access to my laptop but have 2 monitors on the desktop PC and want to maximize windows over those 2 monitors only.

Not directly, but you could do this with the Maximize2Mon script.
