I run three 24" LCDs @ 1920x1200 over DVI off of 2 NVIDIA cards. I recently switched to Windows 7 from XP. Now, whenever I turn off my monitors, Windows cuts the video output to the non-primary monitors and reduces the desktop down to just the primary monitor. All windows and desktop icons goto the primary, which really @$&%$*%&@ me off to have to move them all back to the other monitors every time I come back to the computer. My only solution so far is to set power save on the monitors to 5 mins and just never turn them off, but this is a rediculous and wasteful workaround and even it doesn't work sometimes. Any thoughts?

UltraMon can't really help with this, what you could do is disable/enable secondary monitors via UltraMon first (right-click the UltraMon icon to access the UltraMon menu), this way UltraMon will handle restoring windows and icons to their original positions, but currently Disable/Enable Secondary may not always work correctly on Windows 7 (should be fixed in the 3.0.8 release).

I think I had this problem as well in Vista... I just stopped turning the monitors off. It was annoying and a terrible feature if you ask me... but I'm use to it now.
