How do I view excel files on both monitors. I want to open excel and view different spreadsheets on each monitor.

Excel is not at all helpful in this respect. In Windows 7 you have to open a second instance of Excel by clicking the task bar icon with the middle mouse button or wheel. Then you can move one instance to the other monitor.
You might consider a somewhat sideways approach: open two spreadsheets in one instance of Excel and then use the View menu to view them side by side. Now drag the side of the Excel window so that it covers both monitors. With a bit of careful dragging of the borders, you might get what you want in one instance.

You might want to check out

If you have 64-bit windows, replace "Program files" with "Program files (x86)" or the equivalent if you have a localized windows version.
You will then be able to open more instances of excel.
