I have a laptop with dual display that I intend to connect to two monitors, for a total of three screens (including the laptop screen). I plan to put the two external monitors side by side on a raised shelf above my laptop so that it makes an "upside down pyramid" formation. With this in mind, I want to extend a wallpaper across the two external monitors while displaying a different wallpaper on my laptop screen. Is this possible with ultramon or any other display program? If so, how?

Not directly, UltraMon only supports one image per monitor or a single image stretched across all monitors.
But you could set this up manually, just cut the image in half and assign the two images to the two external monitors, and a different image to the internal screen.
