Can anyone tell me how this is done?
I attempted to use the registry key
HKEY_LOCAL_MACHINE\SOFTWARE\Realtime Soft\UltraMon
DWORD Hide Systray Icon for Non-Admins
but the key was not there. I manually added it and set it to 1, but this did nothing.

This will only hide the system tray icon for non-admin users, hiding the icon for administrators isn't supported.
But you could do this via Windows, go to Control Panel > Taskbar and Start Menu > Notification Area > Customize, then hide the icon for UltraMon.
