My config:
Windows 7 x64
UltraMon 3.0.10 trial
Nvidia GTX295 with 3 displays connected (monitor, projector and plasma)
I have the following problem:
UltraMon can't see all 3 monitor - I can switch between 2 of them by UltraMon, but switching to the 3rd is available only from Nvidia Control Panel.

As I understand Nvidia GTX295 can't use 3 monitors at the time in SLI mode, but I don't need it - I always use 1 display at the time. Can I use UltraMon somehow to easy switch between 3 monitors on GTX295 or it's not possible?

Currently that's not supported, but you'll be able to do this with the next release, 3.1.0.
