For using ultramon is it better to use 1 video card and use the dual outputs of that card or use a 2nd video card and connect the display to other card.
I plan to connect 1 1920X1200 monitor and Plasman which only supports 1920X1080 so the option of clone is not useful to me.

I would go with a single video card, but as far as UltraMon is concerned it doesn't matter.
