I'm using a free trail atm, apparently there is an ability to right click on a shortcut / icon, i.e from a game and get it to output that game to what monitor you choose, but I don't seem to have that option?
Is this option still available, or only in the full version?
I'd like to be able to control which programs run on what monitor like this.

The trial version is fully functional, to set this up right-click the application's shortcut, select Properties from the menu, then select the UltraMon - Display tab and change the primary monitor. This way when you launch the game, UltraMon will first change the primary monitor, then the game gets started on the new primary monitor.
If the shortcut doesn't have the UltraMon tabs, you would need to create a new shortcut for the application via UltraMon menu > Shortcuts (right-click the UltraMon icon in the system tray to bring up the menu).

I'm using windows 7 64bit and I'm trying this with steam and team fortress 2, there are no ultramon or display sub menu's within the items properties.

Thats a cool feature, but I can't get it to work, I've tried setting both the shortcut to monitor 1 and monitor 2 and it just outputs to my primary monitor, rather then my secondary.
Is there a how to / faq on this?

You'll need to change the primary monitor on the display tab, games usually can't be moved to a different monitor, but if you change the primary monitor before launching the game, it will then run on the new primary monitor.
