I am trying to start two different IE8 sessions with each session starting maximazed on a different monitor. It seems that no matter how I configure the shortcuts both sessions start on the same monitor. Is this possible?

I'm seeing that as well. One thing you could do is use the MultiBrowser3 script instead, this will work fine with IE8.
The script runs IE in fullscreen mode, let me know if that doesn't work for you.
