I have several windows which for whatever reason keep on moving from the position i want them to stay in.
Is there a way to use Ultramon to "save" the desired position of a particular window/application (e.g. take a snapshot for any windows that are not minimised) and then help me enforce it (e.g. in background, or hotkey)?

You could do this with the Save/RestoreWndPos scripts.
Please note that this only works in the same session, if you restart the system and your applications, restoring window positions will no longer work (for this you would need to use the WndLayout script).

WndLayout looks likes its the one. Can you suggest how to do a dump to determine the current window position and sizes of current application windows, to be entered into WndLayout?
