Probably a bug - full screen video playback in iTunes on Monitor #2 causes the primary monitor (#1) to go completely black - it is possible to move the mouse between the full screen video on #2 and the black screen on #1

Maybe an iTunes feature/issue, but it's unlikely that this would be related to UltraMon. To confirm this, check if you still have the same behavior without UltraMon running or installed.

Quite correct, is an iTunes "feature", will see if there's anything on any forums ;-)
