On my Windows 7 system I have only a shortcut in Programs which leads to 'UltraMon Options'. Am I supposed to have an UltraMon program group with a shortcut 'UltraMon Desktop'? If not, how is it normally called?

There's no way to integrate it into the desktop Personalization?

You can access all UltraMon features via the UltraMon icon in the system tray (the area of the main taskbar with the clock), right-click this icon to bring up the main UltraMon menu.

You can then configure wallpaper settings via UltraMon menu > Wallpaper.

Ok, thanks. I hadn't seen that.

Why not also create an UltraMon program group, like virtually every other application that gets installed on a Windows system?

Currently that's not planned, something I've been thinking about is to show the UltraMon menu if you click on the UltraMon shortcut under Start Menu > Programs and UltraMon is already running.
