HELP!!!

I'm trying to build a multi-monitor setup w/ 3 monitors and 3 video cards.

Components:
Motherboard: Abit KT7-Raid
OS: Win98SE
Video Card 1: Yet to be purchased. Was an ASUS V3400/TNT AGP, but it's dead because I tried flash its BIOS.
Video Card 2: ATI Radeon 7000 32M PCI
Video Card 3: ATI Radeon 7000 32M PCI
Monitor 1: Nokia 445XiPlus 21"
Monitor 2: ViewSonic E90 19"
Monitor 3: ViewSonic E90 19"

I am on my second re-install of the OS and am using all the latest drivers. Have even flashed the motherboard BIOS.

Right now I'm just trying to get one monitor and one video card to work. It does work, but the problem is Windows thinks I'm already a multi-monitor system. Windows always finds the correct monitor plus a "default monitor". I've tried both the Nokia and the ViewSonic monitors with the same result. I can't remove the default monitor because Windows always finds and installs it on the next reboot without prompting me for anything, where I might could cancel it. By the way, none of the cards is a dual monitor card.

Any help would be greatly appreciated.

Although windows detects both a default monitor and your actual monitor, does it show two monitors in display properties (not just dev manager) ?

Stupid question i know, but do those display adapters have an s-video / composit out sockets?
