I want to use 2 excel documents simulataneously. A differant document on each moniter however excel moves all the excel documents to one moniter or the other

You could do this by opening a second Excel instance manually, to do this go to Start Menu > Run, type excel into the box and hit OK.
Please note that this is no longer an issue with Excel 2013.

What if you wanted to have excel on both screens but to be able to carry out formulas across both files?
By just manually opening another file, it will prevent both excel files from talking to each other.
I'm really interest in finding tis out

You can do it with the Excel's option 'compare to documents' and split the monitors maybe.
To want to, is to be able to.
