I have no experience with Personal Cinema, but as long as UltraMon can recognize each monitor it should work fine.
You'll have to use drivers that allow independent displays/resolutions, on Windows 2000 this means using driver version 28.32 or later.
To check if UltraMon recognizes all monitors, choose About from the UltraMon menu and take a look at the system information.
