In a 3 display configuration, how do I designate the center monitor as the main display and then have the mouse pointer traverse to either the left display or the right display?

You can do this via Display Properties (or if you're using UltraMon, via UltraMon menu > Display Settings), just adjust the monitor arrangement so that it matches the physical arrangement of the monitors on your desk, and set the center monitor as the primary monitor.
