That's not supported. I'll consider support for recoloring the icons for a future release, but am not sure this makes sense as the next version of Windows might use more complex icons again (like Windows 7 and Vista) which can't be recolored easily.
If you have a resource editor you could change the icons yourself though, you would need to open UltraMonResButtons.dll from C:\Program Files\UltraMon, then look for the AERO8 files under the PNG section.
