When I press the '<>' button, the MA Lync chat window fits only the current monitor. It is not possible to stretch it into the second one. What I want to achieve is, while having a video call together with screen sharing via Lync, stretch the Lync window across 2 monitors to have the shared content on one and the video frame on the other one.

Most likely the application restricts how its windows can be resized.
One thing you could try: resize the window manually by dragging the window's edge, with some applications this will work even though UltraMon can't resize the window.

Manual resizing also does not work. Are there any other options? Any dedicated scripts for Microsoft Lync? This, I think, would sell your product to a number of people in my company.

This won't work, applications can monitor and optionally reject attempts to resize their windows, that's what Lync seems to be doing, unfortunately there's no way around this via UltraMon.
