Is there a way to setup the display configuration so that the displays overlap a bit?
Also, can you set up multiple displays that have a gap between them (not touching any edges)?

UltraMon can't do this, and I don't think that this is possible at all.
What you could do regarding gaps is to arrange monitors so that they only touch in a single corner, this way it's unlikely that you'll move the mouse to another monitor by accident.
