I have a G-Force 4 Ti4600 video card (using NView 2), and for monitors I have a Viewsonic A90f, and a Samsung SyncMaster 763MB.

I have been trying to change the resolutions independantly, but can't seem to get it. In the normal display settings, it shows 1 monitor, and a resolution of 2590x1024.

Both monitors are working just like they are supposed to, but I would like to make my viewsonic monitor display at 1600x1200, and have the Samsung go to it's maximum resolution (probably 1280x1024).

I tried UltraMon, but it only shows 1 monitor when I try to adjust the resolution (using the display profiles). in this picture:

I see 2 monitors, but I can't get that on my computer.

You'll need to use DualView instead of span mode. The multi-monitor mode can be changed in advanced display properties (Nvidia tab).

If you are using Windows 2000, you'll need to enable DualView mode first.
