Every time I undock my laptop (Dual Monitors attached via Dock) explorer starts crashing in a never ending loop until I reboot.
Looking at the event logs it looks like explorer is crashing due to UltraMon
is this a known issue? it only started a few weeks ago,

From the explorer.exe build number it looks like you're using version 1809 of Windows 10, I had a similar issue with this version of Windows when connecting to the computer via remote desktop and one of the taskbar extension features was enabled ('remove Start button' or 'enable thinner vertical taskbars').
I'm no longer seeing this with version 2004, if you can upgrade I would recommend doing that, otherwise disabling the taskbar extensions should fix the issue.
