When mirroring monitor #1 which has my desktop or an open application, how do I take a screen shot of monitor #2, or #1 alone? I wish to capture the screen of the app that is running, but I get a screen that is 2X wide rather than 1x wide.

UltraMon mirroring runs in extended desktop mode, so when you press PRINTSCREEN to take a screenshot of the desktop, you get both monitors.
To take a screenshot of the active application only, press ALT+PRINTSCREEN. Or you could use the Snip & Sketch tool included with Windows 10.
