Is there a way or plans for setting a monitor to be the default monitor for a given application? I always want certain apps to show up on monitor 1, etc.

You can do this by right-clicking an existing shortcut for the application and configuring the settings on the 'UltraMon - Window' tab, or by creating a new shortcut by selecting Shortcuts > New Shortcut from the UltraMon menu.
