I know I can run 2 monitors on this card with a dvi-vga adapter but what if I get a dvi-2 vga adapter? Can I run 3 screens?

I am assuming that is a joke. If not, then what is a DVI-2 VGA adapter? In any case, there is no way to get more than 2 different images out of the card at the same time.

No. That's a special cable for that specific card. I have an NVidia card at work that has a special cable similar to that. Mine actually came with 2 different cables, one that allows the card to work with 2 DVI monitors, and another that allows the card to work with 2 VGA monitors. Mine only works with 2 monitors at a time.
