When I've a copy of Firefox open on Monitor 2 (selected in Firefox properties) and I wish to open a second copy it opens on Monitor 1.
Also when I click on a HTML link in an email I've received, it also opens on Monitor 1 not 2 as I'd like.

UltraMon currently doesn't support opening new windows on a specified monitor. Application positioning is only supported via shortcuts.
This feature is being considered for UltraMon 3.

Internet Explorer remembers the last used position, that's probably why it works as expected.
UltraMon doesn't position Internet Explorer windows which were opened by clicking on a link or by selecting 'new window' in IE.

Solved the problem by setting Monitor 2 as my primary monitor.
