I am looking at building my own planetarium. can ten projectors be linked up in the same way a three monitors to create a panoramic spread. If so is it just a case of multiple expansion cards or do I need some specialist software.

Yes, 10 projectors should work fine, with the right video cards, but you may have alignment issues where each image meets the next. Maybe someone else has more specific details.
