UltraMon has lots of features that NVidia's NView utility doesn't have (though NView also has lots of features).
Personally, I only use NView, and about the only special feature I use NView for is to send windows to the primary monitor when I'm accessing my computer via remote control. If I didn't need that feature, I could even turn off NView.
At home I used NView to select separate wallpaper for each monitor, but once the multi-monitor wallpaper is created, you don't need NView to see it, so NView can be turned off if you don't need any of the other features.
