Ok, before loading up ultramon i configured my 2 monitors jst using the advanced settings in windows. Both monitors were running fine and both monitors were being detected. When i fired up ultramon, it only detected a single large monitor. I am running a nVidia GeForce 5700UT withe the monitors being "Cornerstone p1500 21inch" and a "NEC CI A726 17inch".
Now im sure in the past i have run ultramon, but using a different monitor, not the NEC CI A726. so could this be the problem, or have i jst configured the settings wrong??
any help is greatly appreciated.

You'll need to change the multi-monitor mode from horizontal span to Dualview.
To do this, open advanced display properties for the primary monitor, select the Nvidia tab, then select nView Display Mode and change to Dualview mode.

btw, when i said "When i fired up ultramon, it only detected a single large monitor." i meant that Ultramon is detecting both the monitors together, and not individually, so its classing them both as just one big one.

Shouldn't be a problem with the monitor, unfortunately I don't know why the Dualview option isn't available.
Reinstalling the Nvidia drivers might be worth a try.

I have the same problem but with a Radeon 7000 (5.3 cats) on windows 2000, ultramon just isnt detecting my 2nd monitor and if i put it on horizontal span in display settings its just thinks its one big widescreen monitor. Any suggestions?

As far as I know the Windows 2000 drivers for the Radeon 7000 don't support standard multi-monitor mode, they're always in span mode.
To verify this, go to Windows Display Properties and check if you have only a single monitor listed on the Settings tab. If the driver has support for standard multi-monitor mode, you would have two monitors listed, and the Settings tab would look something like this: Display Properties with 3 monitors
Unfortunately there is no workaround for this, the only way to use UltraMon would be to either install Windows XP, or get a Radeon 9000 or later card (the Windows 2000 drivers for the newer cards do support standard multi-monitor mode).

If i add a second gfx card (even if its a crappy old one) to the system would i be able to run something like dual view on windows 2000? Unfortunatly formatting and putting Win XP on isnt really an option as its my work machine in the office and it took nearly a day to install and properly setup my software developing enviroment.
Thanks for any help

Using a PCI video card for the second monitor would also work, the system would then be running in standard multi-monitor mode.
Please note that old PCI video cards (ATI Rage, S3 Trio, ...) usually need to be primary in BIOS in order to work with Windows 2000. See the FAQ for more on this.
