You get the primary monitor only. Remote desktop doesn't support multiple monitors.
The only real issue you might encounter when using remote desktop to a computer running ultramon is that the smart task bars will all come to the primary monitor. Which can be annoying. So you may just want to close ultramon on the host computer when you RD in.
