Our users have multiple monitors on our desks. Once they connect to a Terminal Server, their secondary monitor is unavailable in that session. Is there a way to make this work?

nope, not possible.
best you could do is manually drag the a windowed terminal session app across both displays, but you still be limited to the 'single' virtual desktop front end that TS users see.

We have one user who opens 2 remote sessions, on 2 separate computers, but you could just open 2 session on one computer and put one on each monitor. It's not exactly seemless, but it is useful in some situations.
