Interesting. I get both monitors when I do a PrtScrn. I'm running a Matrox G450 with the regular Matrox drivers, and no add-on display utilities, in regular Windows Extended Desktop mode.
I'm pretty sure the same thing happens on my work computer running an NVidia based card, also in regular Windows Extended Desktop mode.
Are you running any add-on display utilities?
Also, there is some good freeware out there that greatly eases screen captures, especially if you do a lot. One such program is Gadwin PrintScreen

fyi...
print-screen always captures all the displays, never a single one regardless of whether you're running a spanned desktop or independent ones...at least for nt, w2k, & xp. don't know about win9x...i don't run that anymore.
