How can we use mutliple monitors at a remote location using either Microsoft Terminal services or using a Citrix connection?

In a nutshell, you can't. The closest you can get is to set your connection to a double-wide resolution (not always possible).

...And if you mean via display properties, I'm pretty sure you're stuck looking at the virtual properties of your connection.

There are 2 ways I know of:
1. Connect with 2 Citrix sessions and put one session on each monitor.
2. Set the custom screen size on your citrix client to match the total combined size of your 2 monitors.
