I IN NEED OF THE ABILITY TO RUN THE ONE TERMINAL SERVICE WINDOW ACROSS TWO SCREENS (WITH OUT LOWERING THE RESOLUTION AND COLOUR DEPTH) IS ULTRAMON CAPABLE OF THIS?

I'm not aware of a way to do this, what you could do is run multiple remote sessions, one on each monitor.
Matrox has an upcoming product which should enable spanning a single remote session across multiple monitors, the EpicA: Matrox EpicA - multiple monitors for terminals
