I just "upgraded" to 3 monitors last night by adding a dual video Radeon 9000. I had been using an old 8 meg All-In-One Wonder, but XP never seemed to be very fond of it.
Anyways, I had enjoyed the feature of being able to instantly send an app to the other monitor by pressing the appropriate button. Now, Ultramon prompts me to decide which monitor to send it to. My suggestion would be to put additional buttons on the Title Bar. Each of these buttons would have a number in it that corresponds to a monitor. A single click on a numbered button would send the app to that monitor. I think this option would be configurable - users could choose to use the "classic" method or they could turn on this enhanced functionality.
