Just put in a regular dual-output PCI Express video card, and you should be good to go. If the onboard video remains active with the new card installed (though it might automatically disable), and you want to de-activate it, then just go into the BIOS and turn off the onboard video.
If you already have a PCI card (as opposed to the newer PCI Express), then it will likely work fine with the onboard video, so you can connect one monitor to the onboard and one (or two) to the PCI card. For some old PCI cards, you have to set the PCI card as primary in the BIOS.
UltraMon will not help in any way. You have to get the multiple displays working properly first before you install UltraMon.
