Is it possible to set an application to maximize to a certain number of monitors? For example, I run a monitor setup of 6 monitors, in a 5 + 1 configuration.
Would it be possible to maximize an application to the middle three on the bottom row, either on the application opening, or once it is opened via a shorcut / command? Or perhaps maximize to all windows, but ignoring the single monitor on the second row?

If it matters, I am running 3.0.2 Beta and Windows Vista Ultimate 32-Bit.

You could do this with custom position settings for the application's shortcut, to set this up right-click the shortcut, select Properties from the menu, then select the UltraMon - Window tab and enter values for position, width and height.
