My dual display config is really out of balance. I used to have 2 task bars at the bottom of each display with icons for only those applications running on that display. It used to be that when I clicked on the only visible MS Outlook application icon, a list with the full title of all of the outlook documents I had open and was working on would pop up...very convenient.

Now I have no icons on display number one and only individual icons for every single document i have open on display number two...not convenient. I have tried all of the UltraMon configuration menus and some of the Windows XP ones as well.

I am going to post a jpg of my 2 screens to illustrate. Application Icons vs. Doc Icons.JPG

Any suggestions?

Resetting the Smart Taskbar configuration should fix the first problem, see Smart Taskbar: missing taskbar or taskbar shows tasks from wrong monitor for details.

You'll only get a single task button for multiple windows if task grouping is enabled, you can enable this via taskbar properties (Group similar taskbar buttons). Please note that this is only available on the main taskbar, UltraMon doesn't support task grouping.
