When my laptop is NOT docked to my multiple monitor setup and I'm restarting I get the following error:
UltraMon encountered a fatal error and will exit.

You'll get this if UltraMon tries to get the location of one of its folders, and this fails because the folder is on a network share which is no longer available.
Do you still get the error if you restart UltraMon via the shortcut in Start Menu > Programs?
