I figuered out how I can mirror 1 application to 1 or multiple displays. But is it possible to mirror 1 application to one display (Display A) and another application to another display (Display B)

You could do this with the MirrorMon add-on, also see the MirrorAppMM script. Let me know if you have any questions about setting this up.
